Why was there money left in an unattended drawer. When I worked in sales, if the drawer was not being used, the cash was removed.

Could be the cashier was on break from her register. But not all stores take the money out of the drawers at the end of your shifts. I know the store I worked at (grocery chain) we went to a system called "total accountability" where they weren't separate drawers for each cashier. One cash till for every register and you shared the responsibility for that drawers balancing. The money didn't get taken out it stayed in the registers locked up. The drawers were balanced right at the register. If you know what stores do that and have a key to it like this man did you can steal although most stores have security cameras pointed right at the register sometimes several at different angles. Won't get away with it for very long.
